Lemony Goodness Cupcakes

Here is the recipe from a few days ago:

The Cupcake:

2 sticks butter, softened

2 cups granulated sugar

4 large eggs

3 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

1 cup milk

2 Tbsp. lemon zest

2 Tbsp. lemon juice



1. Preheat oven to 350° degrees.

2. Place liners in cupcake pan.

3. In a large bowl with an electric mixer, cream the butter and sugar together until fluffy.

4. Add the eggs, one at a time until completely incorporated

5. In a medium bowl combine the flour, baking soda and salt.

6. Alternately add the dry ingredients and the milk until completely incorporated.

7. Add the lemon zest and fresh lemon juice. Mix batter for an additional minute. Mixture should look light and fluffy.

8. Divide the batter among the cupcake liners and bake for 17 to 23 minutes, or until a wooden pick inserted in the center comes out clean.

 
 
Meringue Frosting:

4 large egg whites


2/3 cup sugar

1 tsp lemon juice

1 tsp finely grated lemon zest

Pinch cream of tartar

Pinch fine salt
Bring a few inches of water to a boil in a saucepan that can hold a mixer’s bowl above the water. Whisk the egg whites, sugar, lemon juice and zest, cream of tarter and salt in the bowl by hand. Set the bowl above the boiling water and continue whisking until the mixture is hot to the touch and the sugar dissolves, about 1 to 2 minutes. Transfer the mixture to a standing mixer fitted with the whisk attachment and beat at medium high speed until meringue is cool and holds a soft peak, about five minutes. You may add a few drops of food coloring and continue beating until stiff peaks form.

I did not beat mine long enough, so the meringue was pretty soft. Otherwise a very YUMMY frosting!!

Mother Goose Birthday Party

So I should have done this so very long ago.
Pictures and details of Conrad's first Birthday party. I decided that I wanted to do a humpty dumpty cake and that I would stick with the Mother Goose theme for the rest of the party.

The Cake:
The wall was made out of chocolate and white, brick layed of course. The egg is a simple, dense white cake, all covered with fondant.


 The party table in the next three pictures. I tried to keep it all in theme.

 The cow jumped over the moon cake balls (these were carrot cake)
I also made This little piggy roast beef pinwheels, and we had Hickory Dickory Dock Soda Pop, and Jack and Jill Water. I also had a picture of the dish running away with the spoon along side the dishes.

 Con was not sure what to do with a cake all to himself. He kept waiting to get told no! Big sister was a big help in showing him how to blow out his candle.

Still waiting to be told no, even though dad showed him how to dig in

 and of course opening presents, he had that down in no time flat!

I did not get pictures of the activites that I had for the kids. I put together a coloring book full of pictures from some of the well known nursery rhymes. The kids actually really enjoyed figuring out the words to go along with the pictures.

Then, I bought about four bags of cotton balls at the local dollar store, and printed full size pictures of lambs, and they got to glue the cotton onto "Mary's" little lamb. It was a great project to keep the kiddo's entertained. 

The party was only about two hours long, and it was perfect. I could not have had a better day celebrating the birth of my precious son.

Humpty Dumpty....

....sat on a wall. Let's pray Humpty Dumpty doesn't have a great fall! So I finished the cake for tomorrow's party....I'm sooooooo proud of this one. It turned out exactally how I had envisioned it. I will post the rest of the party details tomorrow. Yay first birthday's!!!
